In this study, no relationship was found between TBARS values and lightness, not even in the samples without nitrite and savory EO. These results suggest that the darkening or lightening of cured cooked meat is not only related to lipid oxidation (and TBARS values) but also depends on an interaction between nitrite and certain EO compounds.
